The lunch visits at the Royal Saltworks
Spend a day combining history and gastronomy.

Lunch at the Saltworks means stepping into the atmosphere of the 18th century for a moment of perfect harmony between food and wine grown on the local Jura region soil. The meal is prepared by the regionally famous catering company Courbet established in 1949. The current Director, Fabrice COURBET, was awarded the “Meilleur Ouvrier de France” label (Best prize for the finest French artisans) by his peers. Striving for quality and excellence, the chef concocts creative meals using good quality seasonal produce in relation with themes around the Saltworks: salt, architecture, and culinary design. Make the most of your guided tour of the Royal Saltworks; an official tour-guide presents the 11 buildings that were the living and work locations of the Saltworks employees, gives an explanation of the « The History of Salt » exhibit, and then introduces the life and work of Ledoux. After the meal, we recommend that you take the time to discover the 14 gardens of the Saltworks with all their splendour of colours, plants, and smells.

The Royal Saltworks site organises a daylong programme for schools. Students visit the Chaux forest with a guide from the « Office National des Forêts » in the morning, and the Arc-et-Senans Royal Saltworks in the afternoon. Salt and the forest played a significant role in the history of the Franche–Comté region. A shortage of combustibles was the reason for the construction of a new salt production site on the outskirts of the Chaux forest at the end of the 18th century. Ironworks and glass manufacturing units were already using wood from the forest, which at the time, was believed to be inexhaustible.
